I revamped a risotto recipe that my mother and grandmother always made!! Instead of white rice and canned mushrooms, and beef consommé… I used a brown rice medley (Trader Joe’s), fresh mushrooms, and organic beef broth. I actually liked it better! Let me know what you think!
Risotto
1 cup Brown Rice Medley
1/4 cup Ghee
1/3 cup finely chopped onion
1 clove garlic
8 oz. sliced organic mushrooms
2 cups beef broth (or whatever you like)
1/4 tsp. sea salt
2 T fresh chopped parsley
1/2 cup parmesan cheese (opt.)
***Melt ghee.. then add onions, garlic, and mushrooms…sauté until golden brown.
Add rice, parsley, and salt.
Pour in beef broth.
Heat to boiling…then lower heat and simmer covered for approximately 35 minutes (check time on rice packet). Top with parmesan cheese…let melt a minute.
then serve!!!
